From Bean & Goose workshop in Wexford, Ireland each bar is made using sustainably sourced single-origin Ecuadorian chocolate and inspired by the flavours, landscape, designers and makers of Ireland.
This year, we asked Stasele Jakunskaite to create a series of illustrations inspired by Irish landscapes for our spring collection.

This bar is a revelation - salty, savoury and sweet notes in each bite of dark chocolate
Achill Island Sea Salt, Organic Connemara Seaweed and Dark Ecuadorian Chocolate are brought together for this match made in heaven. Achill Island Sea Salt and The Connemara Seaweed Company are both based on small islands off the west coast of Ireland in the wild Atlantic Ocean.

Salty Almond Chocolate Bar
A true classic - whole salty, crunchy almonds with milk chocolate
A saline solution with Oriel sea salt is created and almonds are soaked in it. After that, they are gently roasted in a low oven with a light sprinkle of Irish Atlantic Sea Salt. This makes them slightly crispy, have a nice texture, and taste amazing. In the end, they are sprinkled on top of this milk chocolate bar.

Cranking up the sour notes - whole cherries infused in apple cider vinegar with dark chocolate
Organic sour cherries are infused in Highbank Orchard’sOrganic Balsamic Cider Vinegar with Wild Mother. Highbank Orchards is located on a 17th-century farm in the beautiful County of Kilkenny. Then, they are piled on top of our dark chocolate bar.
